Ingredients
  

For the Peppers

  • 6 medium green bell peppers Choose firm peppers with shiny skin.

For the Filling

  • 1 lb ground beef Adds richness; can substitute with turkey or lentils.
  • 1 chopped onion Sweet onions or shallots can be used to avoid strong flavors.
  • 1 box Rice-a-Roni mix, Spanish flavor (6 7/8 ounce) Can substitute with homemade Spanish rice.

Preparation

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds and core.

Cooking the Filling

  • In a skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is translucent, about 7-10 minutes.
  • Prepare the Rice-a-Roni according to package instructions.
  • Combine the cooked beef and onion mixture with the prepared Rice-a-Roni.

Stuffing and Baking

  • Generously stuff the peppers with the beef mixture.
  • Place the stuffed peppers in a baking dish and cover with foil.
  • Bake for 30-35 minutes, then uncover and bake for an additional 10 minutes.
  • Let them cool slightly before serving.

Notes

This recipe is customizable with different meats or beans. Don't skip cleaning the peppers or the foil-covered baking step for best results.
