  • 1 tablespoon oil or melted butter Use extra virgin olive oil or butter for richer flavor.

For the Filling

  • 1 cup mixed vegetables Includes bell peppers, spinach, onions, etc.
  • 1 teaspoon chili powder Adjust according to heat preference.

Preparation

  • In a bowl, whisk together the flour, milk, eggs, and salt until smooth. Let it rest for 10 minutes.
  • Heat a non-stick skillet over medium heat and add a little oil.

Cooking the Crepes

  • Pour a ladle of batter into the skillet, swirling to coat the bottom evenly. Cook for 1-2 minutes until the edges lift, then flip and cook for another minute.
  • In another pan, sauté the mixed vegetables with chili powder, salt, and pepper until tender.

Assembly

  • Fill each crepe with the spicy vegetable filling, fold, and serve warm.

Notes
