Instructions
 

Preparation

  • Pat the beef chunks dry with paper towels and season with salt and black pepper.
  • Optional: Heat olive oil in a large skillet over medium-high heat and sear the beef chunks for about 2-3 minutes on each side until golden brown.

Slow Cooking

  • Place the halved baby Yukon Gold potatoes in the slow cooker.
  • Nestle the seared beef chunks on top of the potatoes. Add onion slices and carrots if using.
  • Mix melted butter with minced garlic, dried Italian herbs, and red pepper flakes in a bowl, then pour this mixture over the beef and potatoes.
  • Drizzle beef broth on top of everything in the slow cooker.
  • Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours.

Finishing Touches

  • Check if the beef shreds easily with a fork. Adjust salt and black pepper as needed.
  • If the sauce is thin, let it sit uncovered for 15 minutes or mash some potatoes into it to thicken.
  • Transfer beef and potatoes to a serving platter, garnish with fresh parsley, and serve.
