Preparation

  • In a mixing bowl, combine the mashed potatoes, shredded chicken, cheese, green onions, garlic powder, salt, and pepper.
  • Mix well until all ingredients are well incorporated. The mixture should be somewhat sticky.
  • Grab a handful of the mixture and shape it into small balls, about the size of a golf ball.
  • Roll each ball in breadcrumbs until fully coated.

Cooking

  • Heat oil in a frying pan over medium heat. Make sure there’s enough oil to immerse the balls.
  • Carefully place the balls in the pan and fry until golden brown and crispy, about 3-4 minutes on each side.
  • Drain on paper towels and serve hot.

Notes

If you want a healthier version, you can bake them at 400°F for 20-25 minutes. Ensure the oil is at the correct temperature for best results.
