  • 1 cup Bell peppers (red or yellow), diced For color and crunch.
  • 1 cup Zucchini, diced Adds texture and is low in calories.
  • 1 cup Chicken broth or stock For added flavor and moisture.
  • 1 tablespoon Lemon juice Enhances the flavor.
  • 2 tablespoons Chopped parsley, for garnish Adds freshness.

Spices

  • 1 teaspoon Paprika For smoky flavor.
  • 1 teaspoon Oregano Herb that brings flavors together.
  • to taste Salt and pepper For seasoning.

Instructions
 

Preparation

  • Slice chicken thighs into bite-sized pieces. Chop onions, garlic, bell peppers, zucchini, and parsley.
  • In a large pan, heat olive oil over medium heat.

Cooking

  • Add chicken pieces to the pan and cook for 5-7 minutes until golden brown. Season with salt and pepper.
  • Add onions and garlic, and sauté until onions are translucent.
  • Stir in bell peppers and zucchini, cooking until they soften slightly.
  • Sprinkle in paprika and oregano, cook for another couple of minutes.
  • Pour in the chicken broth, bring to a gentle boil, and then let it simmer for about 10 minutes until slightly thickened.
  • Finish with lemon juice and fresh parsley.

Serving

  • Serve the dish on its own or over rice, quinoa, or with crusty bread.

Notes

For best results, marinate chicken ahead and do not overcrowd the pan when cooking.
