  • 4 large Flour Tortillas Whole wheat or gluten-free options are great.

Preparation

  • Brown the ground beef in a large skillet over medium heat. Add taco seasoning and a splash of water. Cook until well-combined and fragrant.
  • Add the cooked rice to the beef and stir until combined into a cohesive filling.
  • Mix in the nacho cheese sauce until everything is creamy.
  • Stir in the sour cream and adjust chipotle sauce to taste.

Assembly

  • Lay out flour tortillas and spoon the beef and rice mixture down the center.
  • Top with shredded cheddar and mozzarella.
  • Fold in the ends of the tortilla and roll it up tightly.

Cooking

  • Heat a skillet over medium heat and melt butter or drizzle olive oil.
