  • 2 cups cooked chicken (shredded or diced) Use rotisserie chicken to save time or make it from scratch.
  • 1 cup long-grain rice Substitute with brown rice for a healthier option.
  • 2 cups chicken broth Avoid low-sodium kinds unless using unsalted butter.
  • 1 cup cream of mushroom soup You can use a homemade version to skip the can!
  • 1 cup shredded cheddar cheese Mix up with a blend of cheeses for more flavor.
  • 1 cup mixed vegetables (frozen or fresh) Usually peas and carrots.
  • 1 teaspoon garlic powder Non-negotiable for flavor.
  • Salt and pepper to taste Essential for enhancing flavors.
  • 1 tablespoon olive oil For sautéing any fresh veggies.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cook your rice according to package instructions.
  • In a frying pan, heat olive oil and sauté fresh veggies until tender.

Mixing

  • In a large bowl, combine the cooked chicken, soft veggies, rice, chicken broth, cream of mushroom soup, garlic powder, salt, and pepper. Mix well.

Baking

  • Transfer the mixture into a greased 9x13 inch baking dish, spreading it evenly.
  • Top with shredded cheese.
  • Cover with foil and bake for 30 minutes; then uncover and bake an additional 15 minutes until the cheese is golden and bubbly.
  • Allow to cool for 5 minutes before serving.

Notes

Leftovers taste even better the next day. Store in an airtight container for up to four days in the fridge. This casserole is customizable for dietary needs.
