Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts Look for organic if possible.
  • 1/3 cup olive oil Use extra virgin for best flavor.
  • 2 tablespoons fresh lemon juice Juice from 2 lemons.
  • 3-4 cloves garlic Minced or crushed.
  • to taste salt and pepper Use kosher salt.

For the Veggies

  • 1 large cucumber Diced for crunch.
  • 1 cup cherry tomatoes Sweet and juicy.
  • 1 small red onion Thinly sliced.
  • 1 large bell pepper Vibrant colors preferred.
  • 1/2 cup feta cheese Crumbled.

For the Tzatziki Sauce

  • 1 cup yogurt Use full-fat or Greek yogurt.
  • 1/2 cup cucumber Grated or finely diced.
  • 1 clove garlic Minced for flavor.
  • 1 tablespoon dill Fresh or dried.
  • 1/2 tablespoon lemon juice To add brightness.

Instructions
 

Marinate the Chicken

  • In a bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper. Add chicken breasts and ensure they are well-coated. Let marinate for at least 30 minutes.

Cook the Chicken

  • Preheat the grill or oven to medium-high heat. Grill the chicken for 6-7 minutes per side or until fully cooked (internal temp of 165°F). Let rest before slicing.

Prepare the Tzatziki Sauce

  • Mix yogurt, grated cucumber, minced garlic, chopped dill, and lemon juice in a bowl. Season with salt and pepper. Chill in the fridge until ready to serve.

Dice the Fresh Veggies

  • Chop cucumbers, tomatoes, red onion, and bell peppers into bite-sized pieces.

Slice the Cooked Chicken

  • Once the chicken is cooked and rested, slice it into strips or chunks.

Assemble the Bowls

  • Layer sliced chicken, fresh veggies, and crumbled feta in bowls. Top with tzatziki sauce.

Serve or Store

  • Serve immediately or pack for meal prep. Store everything separately for best results.

Notes

For best results, do not overcrowd the grill. Prepare tzatziki ahead of time for improved flavor. Feel free to customize veggies based on your preference.
