  • 1 cup Mushrooms Use button or portobello mushrooms, sautéed until golden.
  • 2 tablespoons Olive Oil or Butter Personal preference; butter adds richness while olive oil gives a lighter touch.
  • to taste Black Pepper and Salt Essential seasonings for flavor.

Preparation

  • Start by prepping all your ingredients. Chop your tomatoes and mushrooms, and set aside your sausages and eggs.

Cooking

  • In a large skillet over medium heat, add a touch of olive oil and let it heat. Toss in the sausages and cook until beautifully browned and cooked through.
  • In the same skillet, add the sliced mushrooms after removing the sausages and sauté until golden brown.
  • Add the tomatoes to the skillet and let them soften and release their juices. A sprinkle of salt helps.
  • In a small saucepan, heat up the baked beans while the other ingredients sauté.
  • Cook the eggs to your liking, either fried, scrambled, or poached. For scrambled, whisk them with salt and pepper, and cook low and slow.
  • Toast your bread until golden and then butter it.

Plating

  • Plate everything by starting with the toast, layering the sausages, beans, mushrooms, and eggs, and finishing with fresh tomatoes on the side.
  • Serve with a sprinkle of pepper and fresh herbs if desired.

Notes

Feel free to improvise with ingredients! Add spinach, bell peppers, or even avocado for variation. Use fresh ingredients for the best flavor.
