Ingredients
  

  • 1 small to medium seedless watermelon
  • 1 cup whipped cream, coconut whipped cream, or Greek yogurt
  • 1/2 cup fresh berries (strawberries, blueberries, raspberries)
  • 1 kiwi or mango, peeled and sliced
  • 1/4 cup sliced almonds, chopped pistachios, or shredded coconut (optional)
  • fresh mint leaves, for garnish
  • 1-2 tablespoons honey or agave (optional, for drizzling)

Instructions
 

  • Cut both ends off the watermelon to create flat surfaces. Stand upright and carefully trim off the rind, forming a smooth, cake-shaped cylinder.
  • Pat the surface of the watermelon dry with paper towels to help the topping stick.
  • Place the watermelon on a serving plate or cake stand.
  • Use a spatula to frost the top and sides with whipped cream, coconut whip, or Greek yogurt.
  • Decorate the cake with fresh berries, kiwi or mango slices, nuts or coconut, and mint leaves.
  • If desired, drizzle honey or agave over the top for extra sweetness.
  • Chill for 30 minutes before slicing and serving for best results.
  • Slice with a sharp knife and serve cold.
