Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease two 9-inch round cake pans with cooking spray or butter and lightly dust with flour.

Mixing

  • In a large bowl, cream together the softened butter and sugar until light and fluffy (3-5 minutes).
  • Beat in the eggs one at a time, fully incorporating each one before adding the next. Add vanilla.
  • In a separate bowl, whisk together flour, baking powder, and salt. Gradually incorporate this dry mixture with the butter-sugar mixture, alternating with the milk, starting and ending with the dry ingredients.

Baking

  • Pour the batter evenly into your prepared pans.
  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in pans for 10 minutes before transferring to a cooling rack.

Notes

For best results, use room temperature ingredients and avoid over-mixing. Leftovers can last up to 3 days at room temperature.
