Preparation

  • Gather all your ingredients.
  • Wash and chop the mixed greens, halve the cherry tomatoes, and slice the cucumber into half-moons.
  • Thinly slice the red onion.
  • Carefully slice the avocado, remove the pit, and cut it into cubes.
  • Toast the nuts in a pan over medium heat until golden and fragrant, about 5 minutes.
  • In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.

Assembly

  • In a large bowl, combine the greens, cucumber, tomatoes, onions, and avocado.
