  • 4 medium potatoes, chopped Russet or Yukon Gold works best.
  • 4 large carrots, chopped Adds sweetness.

  • 2 cups beef broth Adds depth to the flavor.
  • 2 cloves garlic, minced Enhances aroma.
  • 1 teaspoon dried thyme Classic herb for comfort.
  • 1 teaspoon dried rosemary Brings an earthy aroma.
  • to taste salt & pepper Season to preference.

Preparation

  • Season the beef chuck roast generously with salt and pepper.
  • Layer the chopped potatoes, carrots, and onion at the bottom of the crockpot.
  • Place the seasoned roast atop the vegetables.
  • In a bowl, mix together beef broth, minced garlic, thyme, and rosemary, then pour over the roast.
  • Cover and cook on low for 8-10 hours or high for 4-6 hours, until the beef is tender.
  • Serve warm, ladling portions of roast, potatoes, and carrots into bowls, drizzling broth over the top.

Notes

For best results, choose well-marbled beef and avoid opening the lid during cooking. Leftover roast can be stored in an airtight container for up to 4 days.
