Ingredients
  

  • 1 pound ground beef
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 3 cups potatoes, diced
  • 1 can kidney beans (15 oz), drained and rinsed
  • 1 can corn (15 oz), drained
  • 1 can diced tomatoes with juice (14.5 oz)
  • 1 can tomato soup or tomato sauce (10.5 oz)
  • 1/2 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • 1/4 teaspoon chili powder (optional)

Instructions
 

  • In a skillet over medium heat, cook the ground beef along with the chopped onion and minced garlic until browned. Drain any excess fat.
  • Transfer the beef mixture to the crockpot.
  • Layer in the diced potatoes, kidney beans, corn, diced tomatoes, and tomato soup or sauce.
  • Season with salt, pepper, paprika, and chili powder, if using. Stir well to combine.
  • Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the potatoes are tender.
  • About 15 minutes before serving, sprinkle shredded cheddar cheese on top and cover until melted.
  • Serve warm, optionally garnished with fresh parsley or green onions.
