  • 4 pieces thin cuts of chicken breast Make sure they're thin for even cooking.
  • 1 cup breadcrumbs Panko is recommended for extra crunch.
  • 2 tablespoons olive oil or melted butter Drizzle for golden color.

  • to taste freshly cracked pepper Essential for flavor.

For the Creamy Sauce

  • 1 cup cream Use real cream for the best flavor.
  • 2 cloves garlic, minced Adds rich flavor.
  • 1 tablespoon fresh parsley, chopped Fresh herbs enhance the dish.
  • 1 teaspoon fresh thyme, chopped Fresh herbs enhance the dish.
  • 1 lemon zest optional Adds brightness.

Instructions
 

Preparation

  • Preheat your oven to 200°C (400°F).
  • Pat your chicken schnitzels dry and season both sides with salt and pepper.
  • In a mixing bowl, whisk together cream, minced garlic, and fresh herbs.
  • Dip each chicken schnitzel into the creamy sauce, then press into breadcrumbs.
  • Lay the breadcrumbed schnitzels on a baking sheet lined with parchment paper. Drizzle with olive oil or melted butter.

Cooking

  • Bake in the preheated oven for about 20-25 minutes until golden brown.
  • Garnish with freshly chopped herbs before serving.

Notes

These schnitzels can be made ahead and frozen. For best results, coat with breadcrumbs and freeze in a single layer before transferring to a ziplock bag. They stay good for up to 3 months. Reheat in the oven for best results.
