Ingredients
  

For the Soup

  • 28 oz Canned tomatoes (whole peeled) Recommended for best results.
  • 1 medium Onion, diced Sweet and caramelized for depth.
  • 3 cloves Garlic, minced Fresh garlic adds punchy flavor.
  • 4 cups Vegetable broth Homemade is ideal, but store-bought works.
  • 1/2 cup Cream or milk Use heavy cream for richness, or lighter alternatives.
  • to taste Salt Essential for flavor.
  • to taste Pepper Essential for flavor.

For the Grilled Cheese

  • 4 slices Bread Use your favorite hearty loaf.
  • 1 tbsp Butter For greasing the skillet.
  • 1 cup Cheese Use a melting cheese like cheddar or mozzarella.

Instructions
 

Preparation

  • Sauté onions and garlic in olive oil until translucent, about 5–7 minutes.
  • Add canned tomatoes and vegetable broth; stir and let simmer for 20 minutes.
  • Blend the soup until smooth using an immersion blender.
  • Stir in cream or milk and season with salt and pepper to taste.

Grilling

  • Butter one side of two slices of bread, place cheese in between and grill in a nonstick skillet over medium-low heat until golden brown, about 3–4 minutes per side.

Serving

  • Ladle the soup into bowls, cut the grilled cheese into triangles, and serve on the side.

Notes

For best results, sauté onions until fully caramelized and use fresh ingredients. Leftovers can be stored in an airtight container for up to 4 days.
