Cowboy Butter Chicken Pasta

Ingredients
  

Pasta

  • 12 ounces Pasta of your choice Use your favorite pasta, such as penne or fettuccine.

Chicken

  • 1 pound Chicken breast, boneless and skinless, cut into bite-sized pieces It's a healthy protein that absorbs the flavors beautifully.

Sauce

  • 4 tablespoons Butter Unsalted recommended for better flavor control.
  • 4 cloves Garlic, minced Use fresh garlic for better flavor.
  • 1 medium Onion, diced Adds sweetness and flavor.
  • 1 cup Heavy cream Or substitute with coconut milk for a lighter option.
  • 1 cup Chicken broth Low-sodium preferred.
  • 1 cup Parmesan cheese, grated You can never have too much cheese!
  • 1 tablespoon Italian seasoning Adds warmth and depth.
  • 1 teaspoon Red pepper flakes Adjust to taste for heat.
  • to taste Salt and pepper Essentials for every dish.
  • to garnish Fresh parsley Optional, for garnish.

Instructions
 

Preparation

  • Bring a large pot of salted water to a rolling boil. Cook the pasta according to the package instructions until al dente.
  • Reserve 1 cup of pasta water before draining the pasta.

Cooking

  • In a large skillet, melt 2 tablespoons of butter over medium heat. Add chicken pieces, seasoned with salt and pepper, and cook for 6-8 minutes until golden brown.
  • Remove chicken from the skillet and set aside.
  • In the same skillet, add the remaining butter. Sauté garlic and onion until soft and translucent, about 3-4 minutes.
  • Pour in heavy cream and chicken broth, stir in Italian seasoning and red pepper flakes. Simmer for 5 minutes until the sauce thickens, adding reserved pasta water as needed.
  • Return chicken to the skillet with the drained pasta. Toss to coat in the creamy sauce and simmer for another 2 minutes.

Serving

  • Top with grated Parmesan cheese and fresh parsley, then serve warm.

Notes

Use fresh garlic for the best flavor. You can substitute chicken with shrimp or tofu for variations.
