Cooking Steps

  • Heat a large pot over medium heat and cook the andouille sausage until browned for about 5-7 minutes.
  • Add chopped onions, bell peppers, and celery to the pot, sautéing for about 5 minutes until veggies are soft.
  • Stir in the diced potatoes and sprinkle with the Cajun spice blend, sautéing for another minute.
  • Pour in vegetable broth or water until it covers the vegetables completely. Bring to a boil, then reduce to a simmer.
  • Let it simmer for about 20-25 minutes until the potatoes are tender.
  • Once the potatoes are tender, stir in the heavy cream and shredded cheddar cheese until melted.
  • Season with salt and pepper to taste and serve hot.

Notes

For best results, don’t rush browning the sausage and consider blending a portion of the soup for a thicker consistency. Seasonal vegetables can also be added for variation.
