Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and place on a baking sheet.
Bake for 45-50 minutes until tender.
Heat olive oil in a skillet over medium heat. Add onion and cook until softened.
Add garlic and ground turkey, cooking until browned and cooked through.
Stir in chili powder, cumin, paprika, oregano, salt, and pepper. Cook for 1-2 minutes.
Add black beans, corn (if using), and tomato sauce or salsa. Cook for another 3-4 minutes.
Slice sweet potatoes lengthwise when cool enough. Fluff insides with a fork.
Fill sweet potatoes with turkey mixture. Top with cheese if using, and bake for an additional 5 minutes to melt cheese.
Garnish with fresh toppings and serve.
