Ingredients

Dry Ingredients

  • 2 cups all-purpose flour The backbone of the scone—this fluffy base absorbs the cream and butter.
  • 1/4 cup granulated sugar Provides a hint of sweetness.
  • 1 tablespoon baking powder Essential for a light, airy structure.
  • 1/2 teaspoon salt Balances the sweetness.

Wet Ingredients

  • 1/2 cup unsalted butter Cold and cubed, crucial for flakiness.
  • 1/2 cup heavy cream Richness is key—do not substitute with low-fat options.
  • 1 large egg Binds ingredients together and contributes to color.
  • 1 teaspoon vanilla extract Enhances flavor.

Optional Ingredients

  • 1/2 cup raisins or currants Optional for a chewy surprise.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  • Cut the cold butter into the flour mixture until it resembles coarse crumbs.
  • In a separate bowl, whisk together the heavy cream, egg, and vanilla extract until smooth.
  • Pour the wet mixture into the dry ingredients and stir gently until just combined. If using, fold in the raisins or currants.
  • Dust your counter with flour, turn the dough onto the surface, and lightly knead until it comes together. Pat into a circle about 1-inch thick.
  • Cut the dough into wedges or use a round cutter for uniform shapes.
  • Place scones on the prepared baking sheet and brush tops with extra cream.

Baking

  • Bake for 15-20 minutes or until golden brown. Allow to cool slightly before serving warm.

Notes

For best results, chill your mixing bowl and tools if your kitchen is warm. Work quickly to keep butter cold, and don’t overmix the dough.
