Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 3 minutes.

Mixing

  • Add the eggs one at a time, mixing well after each addition, along with the vanilla extract.
  • In another bowl, mix the flour, baking soda, and salt together.
  • Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, mixing until just combined.
  • Fold in the chopped pecans gently.

Baking

  • Transfer the batter to the prepared loaf pan, smoothing the top.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

Best served warm with coffee or tea. Can be stored at room temperature for up to 3 days or in the fridge for a week.
