  • 1 sheet puff pastry Choose a good quality one for flakiness.
  • 0.5 cup grated Parmesan cheese Freshly grated is best; avoid powdered.
  • 1 tablespoon fresh rosemary, chopped If dried, use half the amount.
  • 1 large egg For egg wash to achieve a golden brown color.
  • to taste salt and pepper Don't overly salt since Parmesan is already salty.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Lightly flour your surface and roll out the puff pastry until it is a tad thinner.
  • Beat the egg in a small bowl and brush it over the pastry sheet.
  • Generously sprinkle the Parmesan cheese over the pastry, followed by the chopped rosemary.
  • Cut the pastry into thin strips, about an inch wide, and twist each strip to form the straws.
  • Place the twisted straws on a parchment-lined baking sheet and sprinkle with salt and pepper.
  • Bake for 12-15 minutes or until golden brown.
  • Allow them to cool slightly before serving.

Notes

Store leftovers in an airtight container to prevent sogginess. Reheat in a hot oven for 5 minutes to regain crispiness. You can also freeze them before baking for later use.
