  • 2 cups cooked chicken, shredded Leftover rotisserie chicken works beautifully, but poached chicken can be used as well.
  • 2 cups mashed potatoes Leftover mashed potatoes preferred, fresh should be buttery and avoid excess liquid.
  • 1/2 cup breadcrumbs Panko, regular, or gluten-free breadcrumbs are all suitable.
  • 1/2 cup grated cheese Cheddar is classic, but mozzarella, pepper jack, or feta are great alternatives.
  • 1/2 teaspoon garlic powder Fresh garlic can also be used, but can add moisture.
  • 1/2 teaspoon onion powder Season to taste along with salt and pepper.
  • salt and pepper To taste.
  • Oil for frying Use enough oil for proper frying.

Instructions
 

Preparation

  • In a large bowl, combine the shredded chicken, mashed potatoes, garlic powder, onion powder, salt, and pepper.
  • Use your hands to mix everything together until well combined.
  • Roll the mixture into small balls about the size of golf balls.

Coating

  • Roll each ball in breadcrumbs until fully coated.

Cooking

  • Heat oil in a pan over medium heat until hot.
  • Gently add the potato chicken balls to the hot oil, frying until golden brown on all sides.
  • Remove from oil and let drain on paper towels.
  • Serve warm.

Notes

These potato chicken balls can be made in advance and frozen for future meals. Serve with sauces or sides like salad or fries for a complete meal.
