Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, ginger, and salt.
  • Cut in the cold butter until the mixture resembles coarse crumbs.
  • In a separate bowl, mix pumpkin puree, heavy cream, egg, and vanilla extract.
  • Gently fold the wet ingredients into the dry ingredients until just combined.
  • Turn the dough onto a floured surface and pat into a 1-inch thick circle.
  • Cut into wedges or use a cookie cutter.
  • Place the scones on the prepared baking sheet with space in between.
  • Bake for 15-20 minutes until golden brown.
  • Let them cool slightly before serving.

Notes

For best results, use extremely cold butter and don't overwork the dough. They freeze well and are great for brunch or snacking.
