  • 1 cup grated Parmesan cheese Use fresh for best results.
  • 1 cup breadcrumbs Panko is recommended for extra crunchiness.
  • 2 pieces eggs These will bind the coating.
  • 1 teaspoon salt Season to taste.
  • 1 teaspoon pepper Essential for flavor.
  • 2 tablespoons olive oil Drizzle over the chicken before baking.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, beat the eggs with a pinch of salt and pepper.
  • In another bowl, mix the breadcrumbs and Parmesan cheese together.

Coating the Chicken

  • Dip each chicken breast in the egg wash, letting excess drip off.
  • Coat the chicken in the breadcrumb-Parmesan mixture, pressing down to ensure it sticks.

Baking

  • Place the coated chicken in a greased baking dish and drizzle with olive oil.
  • Bake for 20-25 minutes, until the chicken is golden brown and reaches an internal temperature of 165°F (75°C).

Serving

  • Let the chicken rest for a few minutes before serving. Slice and plate, and you may sprinkle fresh parsley on top.

Notes

For best results, use thin chicken breasts and allow for resting after baking. Gluten-free options are available!
