  • 2 cups Bell Peppers Any variety, diced.
  • 2 cups Spinach or Kale For a healthy twist.
  • 1 tsp Ground Paprika Adds depth.
  • 1 tsp Cumin Adds depth.
  • 1 cup Cream or Yogurt Full-fat cream for indulgence or low-fat yogurt for guilt-free version.
  • 1/2 cup Parmesan or Feta Cheese For added flavor.
  • 1/4 cup Fresh Herbs (Basil or Parsley) For garnish.

Instructions
 

Preparation

  • Dice the chicken into bite-sized pieces.
  • In a large skillet, add the olive oil over medium heat.
  • Add the minced garlic and diced onions to the skillet once the oil is shimmering.

Cooking

  • Once the onions are translucent, add the ground paprika and cumin.
  • Stir in the chicken and cook until browned.
  • Add the diced bell peppers and spinach or kale, stirring until the greens are wilted.
  • Lower the heat and add the cream or yogurt, stirring until thickened.
  • Sprinkle in the cheese and taste to adjust seasoning.
  • Garnish with fresh herbs before serving.
