Instructions
 

Preparation

  • In a large mixing bowl, whisk together flour, baking powder, cinnamon, salt, and sugar.
  • In another bowl, whisk together milk, eggs, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry mixture and mix until just combined, keeping some lumps.
  • Fold in the diced apples carefully.

Cooking

  • Heat enough oil in a heavy-bottomed skillet over medium heat until hot.
  • Drop spoonfuls of batter into the hot oil, making sure not to overcrowd the pan.
  • Fry until golden brown on one side (about 2-3 minutes), then flip to brown the other side.
  • Remove fritters and drain excess oil on paper towels.
