Preparation and Cooking

  • In a large pot, heat olive oil over medium heat until warm.
  • Add the chopped onion and garlic, stirring until the onion becomes translucent.
  • Add the sliced carrots and celery, sautéing for about 5–7 minutes until softened.
  • Incorporate the chicken breast pieces, cooking until they are no longer pink, about 5 minutes.
  • Pour in the chicken broth and bring the mixture to a gentle boil before reducing the heat.
  • Stir in the heavy cream and let it simmer for an additional 5 minutes.
  • Season the soup with salt and pepper to taste.
  • Before serving, stir in the chopped fresh basil.
  • Ladle the soup into bowls and enjoy the warm, inviting flavors!

Notes

For added flavor, you can use rotisserie chicken or add spices like red pepper flakes for heat. Store leftovers in the fridge for up to three days or freeze for up to three months.
