  • 2 cups fresh spinach Packed with vitamins and minerals.
  • 1 cup blueberries Adds sweetness and antioxidants.
  • 1 each ripe mango, diced Brings tropical sweetness.
  • 1/4 cup walnuts, chopped For crunch and nutty flavor.
  • 1/4 cup feta cheese, crumbled Creamy and tangy, complements fruit.

Dressing

  • 2 tablespoons honey Adds sweetness.
  • 1 tablespoon Dijon mustard Adds tanginess.
  • 1 tablespoon olive oil Good fat for mixing.
  • to taste Salt and pepper Enhances flavors.

Instructions
 

Preparation

  • Grab a large mixing bowl.
  • Add 2 cups of fresh spinach to the bowl.
  • Dice the ripe mango and add it to the bowl.
  • Add 1 cup of blueberries.
  • Sprinkle chopped walnuts and crumbled feta on top.

Dressing

  • In a small bowl, whisk together honey, Dijon mustard, olive oil, and a pinch of salt and pepper.
  • Drizzle the dressing over the salad and toss gently to combine.

Serving

  • Serve immediately, or store dressing separately if making ahead.

Notes

For a fancy touch, add fresh mint or basil. Leftovers store well for up to 2 days but dress before serving.
