Ingredients
  

  • 1 lb cooked lobster meat, chopped
  • 2 tbsp unsalted butter
  • 1 small onion, diced
  • 1 stalk celery, diced
  • 1 medium carrot, diced
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 cup seafood or chicken stock
  • 1/2 cup heavy cream
  • 1/4 cup dry white wine (optional)
  • 1 tsp fresh thyme leaves
  • to taste salt and black pepper
  • 1 sheet puff pastry, thawed
  • 1 large egg, beaten (for egg wash)

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a large skillet, melt butter over medium heat. Add onion, celery, and carrot; sauté until softened, about 5 minutes.
  • Add garlic and cook for 1 more minute.
  • Sprinkle in flour and stir to form a roux; cook for 1-2 minutes.
  • Gradually whisk in stock, then add cream and wine. Stir and cook until thickened, 3-5 minutes.
  • Add thyme, salt, and pepper. Fold in lobster meat and remove from heat.
  • Transfer filling to ramekins or a baking dish.
  • Cut puff pastry to fit over tops of dishes. Place over filling and crimp edges to seal. Brush with egg wash.
  • Bake for 20-25 minutes, until pastry is puffed and golden brown.
  • Cool slightly before serving.
