Lemon and Garlic Roast Chicken

Ingredients
  

  • 1 whole chicken (3.5 to 4 lbs)
  • 2 pieces lemons, halved
  • 1 head garlic, halved crosswise
  • 3 tablespoons olive oil or melted butter
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped (or 1 tsp dried)
  • 1 tablespoon fresh thyme, chopped (or 1 tsp dried)
  • 0.5 teaspoon paprika (optional)
  • 4 sprigs fresh thyme or rosemary (for stuffing)
  • 1 medium onion, quartered (optional)

Instructions
 

  • Preheat oven to 425°F (220°C). Pat chicken dry with paper towels.
  • Mix olive oil or butter with salt, pepper, rosemary, thyme, and paprika.
  • Rub mixture all over chicken, including under the skin if possible.
  • Stuff cavity with lemon halves, garlic, onion quarters, and herb sprigs.
  • Tie legs with kitchen twine and tuck wing tips under the body.
  • Place chicken breast-side up on a rack in a roasting pan.
  • Roast 1 hour 15 minutes or until internal temperature reaches 165°F (74°C) and juices run clear.
  • Baste halfway through roasting if desired.
  • Let rest 10-15 minutes before carving.
  • Serve with pan juices drizzled on top.
