  • 1/2 cup grated Parmesan cheese Adds a sharp, nutty flavor that elevates the dish.
  • 2 tablespoons olive oil For sautéing.
  • 2 cloves garlic, minced Enhances the flavor.
  • Salt and pepper to taste Essential for seasoning.
  • fresh sprigs parsley for garnish Adds a subtle herby note.

Preparation

  • Season the chicken breasts generously with salt and pepper.
  • In a large skillet, heat the olive oil over medium heat.

Cooking

  • Carefully add the chicken breasts to the skillet and cook undisturbed for about 6-7 minutes until golden brown.
  • Flip the chicken and cook for another 6-7 minutes until cooked through, ensuring it reaches an internal temperature of 165°F (75°C).
  • Remove the chicken from the skillet and let it rest.
  • In the same skillet, add the minced garlic and sliced mushrooms and sauté for about 5-6 minutes until browned.
  • Pour in the heavy cream and stir in the grated Parmesan cheese, simmering on low heat for about 3-4 minutes.
  • Toss in the fresh spinach and let it wilt.
  • Return the chicken to the skillet, coating it in the creamy sauce and warming it through for a minute or two.
  • Garnish with fresh parsley and serve.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on low heat, adding a splash of dairy or broth.
