  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • pinch salt (optional, for flavor balance)

Instructions
 

  • In a large saucepan, combine the buttermilk, sugar, and butter.
  • Cook over medium heat, stirring frequently, until the butter melts and the mixture comes to a gentle boil.
  • Stir in the baking soda. The mixture will foam up—that’s normal!
  • Continue to stir and cook for another 1-2 minutes until the syrup thickens slightly.
  • Remove from heat and stir in the vanilla extract. Add a pinch of salt if desired.
  • Allow the syrup to cool for a few minutes before serving. It will continue to thicken as it cools.
