Preparation

  • Preheat your oven to 350°F (177°C).
  • In a large mixing bowl, mash the ripe bananas until smooth, leaving a few lumps for character.
  • Add the unsweetened applesauce and mix until well combined.
  • Toss in the vanilla extract and ground cinnamon, and mix well.
  • Incorporate the oats into the banana-applesauce mixture, stirring until thoroughly combined.
  • Pour in the almond milk and mix until you achieve a thick batter.
  • Gently fold in the raisins or nuts and dark chocolate chunks.
  • Line a baking sheet with parchment paper and drop mounds of the mixture onto the sheet.
  • Flatten the mounds slightly as they won’t spread much while baking.
  • Bake for 15-20 minutes until golden on the edges.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Best if made with really ripe bananas for maximum sweetness. Optional variations include using pumpkin puree instead of bananas or adding spices like nutmeg.
