  • 2 cups rigatoni pasta Use whole wheat for a healthier twist
  • 1 cup cream cheese Gives the sauce a creamy texture
  • 1/2 cup grated Parmesan cheese For added flavor
  • 1 cup chicken broth Homemade is ideal, but store-bought works too
  • 2 tablespoons olive oil For flavor and grilling
  • 1 teaspoon garlic powder Replace with fresh garlic for bold flavor
  • to taste salt and pepper Essential for flavor
  • to taste fresh parsley for garnish Adds color and flavor

Instructions
 

Preparation

  • Preheat the grill to medium heat.
  • Season the chicken breasts with olive oil, garlic powder, salt, and pepper.

Cooking

  • Grill the chicken for about 6-7 minutes on each side until fully cooked.
  • While the chicken is grilling, boil salted water in a large pot and cook the rigatoni according to package instructions until al dente.
  • Drain the rigatoni and set aside.
  • In a saucepan over medium heat, combine cream cheese and chicken broth until smooth.
  • Add grated Parmesan cheese and stir until melted.
  • Season with salt and pepper, then fold in the cooked rigatoni.
  • Let the chicken rest for a few minutes before slicing.

Serving

  • Plate the rigatoni, top with sliced grilled chicken, and garnish with parsley.

Notes

Let chicken rest before slicing to retain juices. Add chicken broth if the sauce is too thick.
