Ingredients
  

  • 8-10 jalapeños fresh, sliced into rings and seeds removed
  • 1 cup buttermilk
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal or breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • to taste none salt
  • to taste none pepper
  • as needed none vegetable oil for frying
  • optional none ranch or chipotle dipping sauce

Instructions
 

  • Wash and slice jalapeños into rings (or halve and remove seeds for less heat). Set aside.
  • In a shallow bowl, mix together the buttermilk and jalapeño slices. Let them soak for at least 15 minutes.
  • In a separate shallow bowl, combine flour, cornmeal (or breadcrumbs), garlic powder, paprika, salt, and pepper.
  • Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  • Remove jalapeños from the buttermilk, allowing excess liquid to drip off. Dredge each slice in the flour mixture to coat thoroughly.
  • Fry the jalapeños in batches for 2-3 minutes or until golden and crispy. Do not overcrowd the pan.
  • Using a slotted spoon, remove the fried jalapeños and drain them on paper towels.
  • Serve the fried jalapeños hot with your favorite dipping sauce such as ranch, chipotle mayo, or queso.
