Wash and slice jalapeños into rings (or halve and remove seeds for less heat). Set aside.
In a shallow bowl, mix together the buttermilk and jalapeño slices. Let them soak for at least 15 minutes.
In a separate shallow bowl, combine flour, cornmeal (or breadcrumbs), garlic powder, paprika, salt, and pepper.
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
Remove jalapeños from the buttermilk, allowing excess liquid to drip off. Dredge each slice in the flour mixture to coat thoroughly.
Fry the jalapeños in batches for 2-3 minutes or until golden and crispy. Do not overcrowd the pan.
Using a slotted spoon, remove the fried jalapeños and drain them on paper towels.
Serve the fried jalapeños hot with your favorite dipping sauce such as ranch, chipotle mayo, or queso.
