  • 1 cup Cherry Tomatoes Halved for sweetness.
  • 1 cup Cucumber Seedless recommended, diced.
  • 1/4 cup Red Onion Thinly sliced for a zesty bite.
  • 1 each Avocado Sliced, add lemon juice to prevent browning.
  • 1/2 cup Feta Cheese Crumbled on top for flavor.

Dressing

  • 1/4 cup Olive Oil Extra virgin is best for flavor.
  • 1 each Lemon Juiced for a tangy dressing.

Instructions
 

Preparation

  • Gather all your ingredients and lay them out on your countertop.
  • Wash the mixed greens thoroughly and dry them (preferably in a salad spinner).
  • Halve the cherry tomatoes and set aside in a bowl.
  • Dice the cucumber into moderate-sized chunks.
  • Thinly slice the red onion.
  • Cut the avocado in half, remove the pit, and slice; sprinkle with lemon juice to prevent browning.

Assembly

  • In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and avocado.
  • In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  • Drizzle the dressing over the salad and toss gently to combine.
  • Sprinkle crumbled feta cheese on top and serve immediately.

Notes

Store any leftover salad in an airtight container for up to two days, keeping dressing separate. This salad is best enjoyed fresh.
