  • 1 leaf bay leaf Adds depth to the soup.

  • 4 slices French baguette or gluten-free bread For the topping.
  • 1 to 1 ½ cups Gruyère cheese, mozzarella, or Parmesan Gruyère is traditional; mozzarella makes it stretchy.
  • Optional: splash of white wine A dry option elevates the flavors.

Preparation

  • Heat olive oil or butter in a large pot over medium heat.
  • Add sliced onions and stir occasionally, allowing them to caramelize for 25-30 minutes until golden brown.
  • Add thyme, bay leaf, salt, and pepper.
  • Pour in the broth and add white wine, then let the soup simmer for about 15 minutes.

Assembly

  • Preheat the oven to broil.
  • Ladle soup into oven-safe bowls.
  • Top each bowl with a slice of bread.
  • Sprinkle cheese generously on top.

Final Touch

  • Broil the bowls for 2-3 minutes until the cheese is bubbly and golden brown.
  • Let cool slightly before serving.

Notes

For best results, use yellow onions and quality broth. Broiling is essential for that cheesy top.
