Ingredients
  

Main Ingredients

  • 2 pieces Chicken thighs (or breast) Juicy and forgiving to cook, perfect for high protein meals.
  • 2 pieces Bell peppers Sweet and colorful, any color will do.
  • 1 medium Onion Aromatics that create a beautiful base for the dish.
  • 3 cloves Garlic Adds gourmet aroma when sautéed.
  • 1 can Canned tomatoes Creates the rich sauce.
  • 1 cup Stock or broth Used to deglaze the pan for added depth.
  • 1 tablespoon Olive oil For sautéing; avoid smoking point.

Spices

  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Chili powder
  • 1 teaspoon Oregano

Garnish

  • 2 tablespoons Fresh herbs (parsley or cilantro) For garnish.

Instructions
 

Preparation

  • Gather and chop all the vegetables to save time while cooking.
  • Heat olive oil in a skillet until shimmering.

Cooking

  • Sauté the diced onions in the skillet until translucent, then add crushed garlic for about 30 seconds.
  • Brown the chicken, seasoned with salt and pepper, on both sides until golden.
  • Add bell peppers, cumin, paprika, chili powder, and oregano into the skillet and sauté for a few minutes.
  • Pour in canned tomatoes and splash of stock, scraping the bottom of the skillet.
  • Let it simmer for about 10-15 minutes until flavors meld and sauce thickens.
  • Taste and adjust spices as needed.

Serving

  • Garnish with fresh herbs and serve immediately over rice, quinoa, or zoodles.
