  • 1 cup boiling water Used to achieve a thin and light batter.

Preparation

  • In a mixing bowl, combine the flour, eggs, milk, sugar, and melted butter. Whisk together until the mixture is completely smooth.
  • Let the batter rest for about 30 minutes if you have time, to allow the gluten to relax.

Cooking

  • Place a non-stick skillet over medium heat and let it warm up.
  • Pour a scoop of batter into the center of the skillet and tilt to spread it evenly.
  • Cook for about 1-2 minutes until the edges lift slightly and are golden, then flip and cook for another minute.

Serving

  • Mix the sweetened condensed milk with boiling water in a separate bowl until smooth.
  • Serve the crepes warm, drizzling the sweetened condensed milk mixture over the top.

Notes

These crepes can be customized with toppings like fresh fruits, chocolate, or whipped cream. Store leftovers in an airtight container for up to 2 days.
