  • 4 medium Beets Fresh, peeled and chopped.
  • 4 medium Carrots Fresh, peeled and chopped.

Dressing

  • 3 tablespoons Olive Oil For roasting.
  • 1 tablespoon Balsamic Glaze For drizzling on top.
  • to taste Salt & Pepper For seasoning.

Toppings

  • 1 cup Burrata Cheese Fresh, torn into pieces.
  • 1/4 cup Fresh Herbs (like Basil or Parsley) Chopped for garnish.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel and chop the beets and carrots into equal-sized pieces, about 1-inch thick.
  • In a large bowl, toss the beets and carrots with olive oil, salt, and pepper until evenly coated.

Roasting

  • Spread the vegetables on a baking sheet in a single layer.
  • Roast in the oven for 25-30 minutes, stirring halfway through, until tender and caramelized.
  • Once done, let them cool slightly.

Assembly

  • On a serving platter, arrange the roasted vegetables.
  • Tear the burrata cheese and place it on top.
  • Drizzle with balsamic glaze and garnish with fresh herbs before serving.

Notes

For best flavor, do not skip the balsamic glaze and use fresh, quality ingredients.
