  • 2 pieces eggs Help the breadcrumbs stick to the chicken.
  • 1 tablespoon garlic powder Enhances the flavor of the dish.
  • 1 teaspoon salt Essential for enhancing flavors.
  • 1 teaspoon black pepper Adds warmth to the dish.
  • 1/2 cup olive oil Helps fry the chicken to perfection.

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a shallow bowl, mix together the breadcrumbs, grated Parmesan, garlic powder, salt, and pepper.
  • In another bowl, beat the eggs until mixed thoroughly.
  • Dip each chicken breast in the egg mixture, letting the excess drip off, then coat it with the breadcrumb mixture.
  • In a large skillet, heat the olive oil over medium heat until hot.
  • Fry the coated chicken in batches for about 4-5 minutes per side, until golden brown.
  • Transfer the fried chicken to a baking dish and bake in the oven for 15-20 minutes or until juices run clear.
  • Let the chicken rest for a few minutes before serving.

Notes

For best results, don't skip resting the chicken after cooking and avoid overcrowding the pan to ensure crispiness. You can also experiment with flavors by adding Italian herbs or red pepper flakes.
