Preparation

  • Preheat the oven to 375°F (190°C).
  • In a shallow bowl, crack two eggs and season with salt and pepper.
  • In another bowl, mix breadcrumbs and grated Parmesan.

Cooking

  • Coat the chicken breasts first in the egg mixture, then in the breadcrumb mixture.
  • Heat olive oil in a frying pan over medium heat and fry each side for about 3-4 minutes until golden brown.
  • Transfer the chicken to a baking dish and bake for 15-20 minutes until the internal temperature reaches 165°F (75°C).

Serving

  • Serve hot with your favorite sides.

Notes

For gluten-free, use gluten-free breadcrumbs. Consider marinating chicken for extra flavor. Let the chicken rest after cooking to keep it juicy.
