  • 2 cups yellow rice Basmati or jasmine rice works best.
  • 1 cup mixed vegetables Carrots, peas, and bell peppers are recommended.
  • 1 cup salad A mix of lettuce, tomatoes, and cucumbers.
  • 1/2 cup bean salad Canned beans are convenient; rinse to remove excess sodium.
  • 2 tablespoons olive oil For roasting the chicken and dressing the salad.
  • to taste salt and pepper Essential for flavor.
  • 1 teaspoon turmeric For coloring the rice.
  • 1 teaspoon cumin Adds depth to chicken flavor.
  • 1 teaspoon paprika Enhances the flavor profile of the chicken.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Pat the chicken dry with paper towels and rub it with olive oil, salt, pepper, cumin, paprika, and turmeric.
  • Place the chicken in a roasting pan and roast for 1-1.5 hours or until juices run clear.
  • Meanwhile, cook the yellow rice. Combine rice with recommended water ratio, add turmeric and salt, bring to boil, then simmer for 15-20 minutes until fluffy.
  • Prepare the mixed vegetables by sautéing or steaming them with olive oil, adding salt and pepper to taste.
  • Assemble a fresh salad with lettuce, tomatoes, cucumbers, olive oil, lemon juice, and salt.
  • Once everything is ready, lay out the roasted chicken, yellow rice, mixed veggies, and salad on a large platter.

Notes

Let the chicken rest for 10-15 minutes before carving for juicier results. This dish is perfect for meal prep and leftovers can be used for wraps.
