  • 4 large large ripe tomatoes Select large, juicy beauties that are firm yet slightly soft.
  • 1/4 cup extra virgin olive oil Adds richness to the tomatoes.
  • 2 tablespoons balsamic vinegar Elevates the flavor with tangy sweetness.
  • 1 teaspoon sea salt Enhances the natural sweetness of the tomatoes.
  • 1/2 teaspoon freshly ground black pepper Adds a touch of spice.
  • 2 cloves garlic, minced Adds depth of flavor.
  • 1 tablespoon fresh basil, chopped Fresh or dried can be used.
  • 1 tablespoon fresh parsley, chopped Fresh or dried can be adapted.
  • 1/2 teaspoon red pepper flakes (optional) Add for a bit of heat.

Instructions
 

Preparation

  • Rinse the tomatoes under cold water and pat them dry. Slice them into wedges, rounds, or cubes for even marinating.

The Marinade

  • In a large bowl, whisk together olive oil and balsamic vinegar. Add salt, pepper, and minced garlic, stirring well.
  • Mix in chopped fresh basil and parsley, tasting the marinade to adjust seasoning as needed.

Marinate the Tomatoes

  • Pour the marinade over the sliced tomatoes and gently toss to coat. Cover and let it marinate at room temperature for at least 30 minutes and up to 2 hours.

Serving

  • Toss the marinated tomatoes again before serving. Drizzle with leftover marinade and serve with crusty bread.

Notes

Letting the tomatoes marinate longer enhances flavor. Store leftovers in the fridge for up to 3 days.
