For the pudding base

  • 2 cups milk Full-fat milk is recommended for a creamier texture.
  • 1/2 cup heavy cream Adds richness.
  • 1/2 cup sugar Balances the richness.
  • 1/4 cup cornstarch Crucial for thickening; avoid flour.
  • 1/4 teaspoon cardamom powder Adds unique flavor.
  • 1 teaspoon vanilla extract Essential for flavor.
  • a pinch salt Enhances flavor.

For the garnish

  • 1/4 cup chopped nuts Almonds or pistachios recommended.

Instructions
 

Preparation

  • In a medium saucepan, combine milk, heavy cream, and sugar over medium heat. Stir slowly to dissolve sugar.
  • In a small bowl, mix cornstarch with a few spoonfuls of the warm milk mixture to create a slurry.
  • Once milk is warm, slowly whisk in cornstarch slurry while stirring continuously until thickened, about 5 minutes.

Flavoring and Cooling

  • Add cardamom powder, vanilla extract, and a pinch of salt into the thickened pudding. Stir well.
  • Pour the pudding into serving molds or bowls and let cool to room temperature.
  • Refrigerate for at least 4 hours until set.

Serving

  • Once set, sprinkle chopped nuts on top before serving.

Notes

For best results, fold in some whipped cream before serving for an extra layer of texture. Feel free to substitute seasonal flavors like cinnamon or pumpkin spice.
