  • 3 pieces ripe bananas (about 1 ½ cups mashed) Look for bananas that have plenty of brown spots.
  • 2 cups rolled oats Quick oats can be tempting, but rolled oats provide the best results.
  • cup honey or pure maple syrup Maple syrup adds an earthy undertone.
  • 2 large eggs Always use fresh eggs for the best results.
  • 1 tsp baking powder Don't skip this, or you’ll end up with dense bars.
  • 1 tsp vanilla extract Use pure vanilla extract for the best flavor.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, mash the three ripe bananas until smooth.
  • Add rolled oats, honey (or maple syrup), eggs, baking powder, and vanilla extract to the bowl. Mix until well combined.
  • Prepare an 8x8-inch baking dish by greasing it or lining it with parchment paper.
  • Pour the mixture into the baking dish and spread evenly.

Baking

  • Bake in the preheated oven for 25-30 minutes until golden brown.
  • Let the bars cool for at least 10 minutes before slicing into squares.

Notes

These bars can be stored in an airtight container on the counter for three days or refrigerated for up to a week. For meal prep, freeze individually wrapped bars for up to three months.
