  • 1/4 teaspoon ground nutmeg Adds a lovely aroma.
  • 1/2 cup granulated sugar To sweeten the loaf.
  • 1/2 cup brown sugar Adds moisture and flavor.
  • 1/2 cup vegetable oil Keeps the loaf moist.
  • 3 large eggs Binding agents that add richness.
  • 1 teaspoon vanilla extract Enhances overall flavor.
  • 1/2 cup chopped walnuts or pecans Optional for added crunch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease your loaf pan.
  • In a large bowl, mix together the grated carrots and chopped dates gently.
  • In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In a spacious mixing bowl, combine the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla. Whisk until blended.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Some lumps are okay.
  • Fold in the carrot and date mixture, and nuts if using.
  • Pour the batter into the prepared loaf pan evenly.

Baking

  • Bake in the oven for 50-60 minutes. Check doneness with a toothpick.
  • Let cool in the pan for about 10 minutes before transferring to a wire rack.
  • Allow to cool completely before slicing.

Notes

Store in an airtight container at room temperature for 2-3 days. Also freezes well if sliced and wrapped.
