  • 1.5 cups Canned or Frozen Corn Use sweet corn for best flavor. Thaw frozen corn completely and pat dry.
  • 1 cup Shredded Cheddar Cheese Sharp cheddar is preferred for flavor.
  • 0.5 cup Shredded Mozzarella Cheese Low-moisture mozzarella works best.
  • 0.5 cup All-Purpose Flour Can substitute with a gluten-free blend.
  • 1 large Egg Room temperature is ideal.
  • 0.25 cup Breadcrumbs Use panko for extra crunch.

Spices and Seasonings

  • 1 teaspoon Garlic Powder Enhances savory flavor.
  • 0.5 teaspoon Onion Powder Adds depth.
  • 0.5 teaspoon Paprika Use smoked paprika for a more intense flavor.
  • 0.25 teaspoon Salt Adjust according to taste.
  • 0.125 teaspoon Black Pepper Adds a little heat.

Preparation

  • If using canned corn, drain thoroughly. If using frozen, thaw and pat dry.
  • In a large mixing bowl, whisk the egg lightly.
  • Add flour, shredded cheddar, mozzarella, breadcrumbs, garlic powder, onion powder, paprika, salt, and black pepper to the egg. Mix until well combined.
  • Gently fold in the corn until evenly distributed.
  • Roll tablespoons of the mixture into small balls or flatten into discs.

Cooking

  • For frying: Heat oil in a deep frying pan to 350-375°F (175-190°C). Carefully add the bites and fry for 2-3 minutes on each side until golden brown.
  • For baking: Preheat oven to 400°F (200°C). Place bites on a parchment-lined baking sheet and lightly brush with oil. Bake for 15-20 minutes, flipping halfway through.

Serving

  • Once cooked, transfer to a plate lined with paper towels to drain excess oil.
  • Let cool slightly before serving warm with your favorite dipping sauces.

Notes

These bites are freezer-friendly! Freeze the formed bites before frying or baking. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
