  • 1 tsp garlic powder Or use fresh garlic for added flavor.
  • 1/2 cup mustard Any type including Dijon, yellow, or spicy brown.
  • 1 cup heavy cream or sour cream Sour cream can add a tangy flavor.
  • 2 cups cooked rice Any variety such as jasmine or basmati.
  • to preference assorted vegetables (e.g., broccoli, carrots, bell peppers) Add seasonal vegetables as desired.

Preparation

  • Chop the vegetables as desired, such as steaming broccoli, slicing carrots, and dicing bell peppers.

Cooking

  • Heat olive oil or butter in a skillet over medium heat.
  • Season chicken with salt, pepper, and garlic powder, coating evenly.
  • Cook chicken in the skillet for about 6-8 minutes on each side until golden brown and cooked through.
  • Remove chicken from skillet and let it rest on a plate.
  • In the same skillet, mix in mustard and heavy cream, stirring to combine.
  • Return chicken to the skillet and simmer for a few minutes until the sauce thickens.

Serving

  • Plate rice, top with creamy mustard chicken, and add the sautéed vegetables.
  • Garnish with parsley if desired.

Notes

Don’t overcrowd the pan when frying the chicken. Allow the sauce to bubble and thicken for best results. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
